OBJECTIVES

  1. Discovering and learning Italian traditional cooking and UNESCO Mediterranean diet: features, flavours, ingredients, products, recipes, social and cultural values, celebrating the “European Year of Cultural Heritage 2018”
  2. Learning/improving practical skills, techniques, procedures of cooking and realising a full Italian menu
  3. Reflect on health, well-being and sustainability
  4. Stimulating professional and business cooperation

PROGRAMME

Day 1: Welcome

Presentation of the course and participants  
Brainstorming and team building  
Cultural walking tour of the city centre, together with a professional tour leader  

Day 2

Italian cooking and UNESCO Mediterranean diet: features, social and cultural values  
Laboratory of Cooking  
Common meal: enjoying together what we prepared during the day!  

Day 3

Laboratory of Cooking  
Exploring traditional culture and authentic flavours  
Common meal: enjoying together what we prepared during the day!  

Day 4

Laboratory of Cooking  
Exploring traditional culture and authentic flavours  
Common meal: enjoying together what we prepared during the day!  

Day 5: A new beginning

Guided tour of the traditional outdoor and indoor markets and local coffee tasting  
Guided visit of a UNESCO cultural heritage site  
Planning the follow up: future projects together  
Course evaluation  
Releasing of official course certifications.

Depending on the date & place, additional visits to local heritage, food or wine companies and/or schools may be provided
